Stu Bickel was born on October 2, 1986 in Chanhassen, Minnesota. He joined the University of Minnesota Golden Gophers men’s hockey team in 2007 for his freshman season.

Stu Bickel's 2007-2008 freshman season earned him his first letter in spite of a team record of 41 penalties for a total of 90 minutes. Stu Bickel played in every game and recorded an assist for the only goal against Denver in the WCHA Final Five title game.

Stu Bickel spent the 2006-07 season with the Sioux Falls Stampede of the USHL, where his head coach was former Gopher Kevin Hartzell. He posted two goals and 11 assists in 57 games. He was the USHL leader in penalty minutes with 215. Bickel played for the Southern Minnesota Express of the NAHL before joining the Stampede, where he had 20 points on eight goals in 38 games. Bickel played a senior season of prep hockey at the forward position at Eden Prairie High School where he was second on the team in scoring with 41 points on 16 goals. Bickel also played at Minnetonka High School in 2003-04.

Stu Bickel enjoys fishing in his free time. His most memorable hockey moment is winning the Clark Cup with Sioux Falls. He is the son of Tom and Sally Bickel.
